The science of cooking. The kitchen isn’t just for grownups. This special explores why meat browns, how refrigerators work, why water and oil don’t mix and the best way to use a knife. Featuring The Splendid Table’s Francis Lam, experts from America’s Test Kitchen and other special guests.
10 a.m.- Giving Thanks
Host John Birge presents a contemporary celebration of gratitude, with music and stories of Thanksgiving. This year’s “Giving Thanks” also celebrates the Feast Day of St. Cecilia, the patron saint of music. Special guests include John Rutter, with a world premiere of his latest choral work, conductor Nic McGegan…and it offers a remembrance of former U.S. Poet Laureate Donald Hall.
11 a.m. – Turkey Confidential
Splendid Table host Francis Lam helps solve kitchen crises in real time live on your radio. This year’s special guests include former host Lynne Rossetto Kasper, chefs Dorie Greenspan, Pati Jinich , and many more.

Russian-born journalist Masha Gessen opens her home to queer asylum seekers in New York every Thanksgiving. This year, the tradition has even more relevance for her, with President Trump seeking to make it more difficult to get asylum in the US.
Plus, a Native American chef who grew up on a reservation in South Dakota says he considered abandoning the holiday, because of the way it whitewashes what his ancestors went through. But in the end, he decided to reinvent it.
And we have some music from Mexican-born jazz singer Magos Herrera.

Singer and pianist Linda Gail Lewis and songwriter, singer and guitarist Robbie Fulks will perform in our studio. They have a new album of duets called “Wild, Wild, Wild.” Most of the songs were written by Fulks. Linda Gail Lewis is younger sister of Jerry Lee Lewis. She learned to play piano from watching him. They started performing together when she was 14.
